Introduction
Simulations of the impact of food taxes and subsidies on health and environmental outcomes have already been carried out in the literature, but these models are diverse and rarely model both health and the environment. Estimates from incomplete models can be misleading: outcomes can be detrimental to an issue that was not considered in the model.
Aims
The aim of this study is to map the important areas affected by planetary food taxes and subsidies and to build a comprehensive model concept.

Methods
A systematic literature search database was used to map the areas. An initial model concept was then iteratively redesigned and finalized.
Result
The main domains of outcomes are health, nutrition, monetary, and environmental outcomes, the latter being assessed in different areas such as freshwater and land use and even biodiversity loss. Elements that strongly influence the model estimates need to be carefully assessed, such as the change in consumption that lies at the heart of the model: it is important to set some boundaries on the change in food consumption. Health outcomes include the health impacts of climate change that affect not only the modeled region but the entire world population. Input data are scarce, especially reliable estimates of price elasticities and the health impacts of climate change.
Conclusion
The model concept maps out a complex picture with a number of factors. In the future it may be important to distinguish which of these are the ones that really need to be incorporated into a simulation model. Including the health impacts of climate can broaden the picture and emphasize the global nature of our food choices. The next step for public health could be to model food taxes and subsidies for Europe and to compare the estimates with previous models. Stakeholders’ impressions of such taxes and subsidies should also be explored.
