Introduction: The fact that a high percentage of the population worldwide cannot fully digest lactose increasingly justifies the use of lactose-free carriers such as plant-based drinks. They are in ascendency as part of the green consumer transition and a greater focus on personal health. There are several options to choose from and numerous variables that highly differ in their sensory characteristics.
Orally disintegrating tablets (ODTs) are becoming increasingly popular. This is due to their rapid disintegration upon contact with saliva, facilitating easy swallowing of the liquid and thereby enhancing patient compliance. Although there are several methods to produce ODTs, the formulation remains a technological challenge since a porous, quickly dispersing structure must be ensured in addition to the appropriate mechanical strength of the tablet.
Aims: The research aims to determine how much the plant-based drinks' likeness and flavours differ from the original milk and the development of an ODT form that satisfies the needs described in the introduction but can also be used for vegans or lactose intolerant patients.
Methods: We investigated different kinds of plant-based drinks and compared them to traditional milk (Mizo 1,5%, 3,8%) and lactose-free milk (Mizo 1,5%). The Hedonic scale method was used to evaluate the sensory characteristics, which contains 9 different levels of likeness. For the organoleptic studies, the beverages were served in a clear plastic cup labelled with 3 random digits. The portion size was approximately 25 ml, ensuring participants could re-taste the samples. Fluidicam Rheo was used to measure the viscosity of the liquids. The ODTs were created using the freeze-drying method. After lyophilization, the uniformity of mass, disintegration time, wetting properties, and moisture content were assessed.
Results: We measured the difference in flavours between the plant-based drinks and milk. We have successfully produced freeze-dried plant-based ODTs. Moreover, we created a system suitable for carrying active ingredients based on conventional and lactose-free milk, along with plant-based drinks.
Conclusion: A porous structure can be formed using plant-based drinks as carriers, akin to traditional milk. The plant-based drinks could offer a great substitute for traditional milk.
